My dad has a knack for finding strange things and then making them. He always tries out all these weird recipes on us when we come up here to West Virginia for a visit. This time one of the things he made were pumpkin pancakes. We had these for breakfast yesterday. He found the recipe online HERE. None of us were sure what we would think of them, having never had them before. All of us (four adults and two children) liked them. My sister wasn't too big on them at first, but then had to have seconds, because she said they 'grow on you'. These would be especially good in October and November (Halloween and Thanksgiving), although I would eat them anytime. I'm already planning on making them for breakfast when we get back to South Carolina. They're soft and fluffy and not too pumpkin-y.
- 2 cups complete pancake mix (such as AUNT JEMIMA Buttermilk Complete)
- 1 1/2 cups water
- 2/3 cup canned pumpkin (dad used Libby's)
- Nonstick cooking spray
COMBINE pancake mix, water and pumpkin in medium bowl. Stir just until moistened. Batter may be lumpy.
HEAT griddle or large skillet over medium heat; spray with nonstick spray. Pour 1/4 cup batter onto hot griddle; cook until batter bubbles begin to burst. Turn and continue cooking for 1 to 2 minutes or until golden. Repeat with remaining batter. Serve with syrup.
Makes 6 servings, about 12 pancakes total

These were my first ones, Shannon. My sister, who used to work at Bob Evan's, said it looked, sounded, and tasted like something they would serve there around Thanksgiving. I'm already planning on fixing these when we get back home. I'm pretty sure I have a can of pumpkin in the cabinet.

LOL @ Michelle. My dad just cracks me up with his recipes. He makes such weird stuff and sometimes he won't like what he first comes up with and so he ends up turning it into something else. Last night he made some kind of peanut butter-pumpkin stuff that you smear on bananas and then put it all on bread. He wasn't impressed with it (it was pretty gross!) so he threw some cream cheese in and I don't even know what else and made it into a pie. LOL

LOL @ Shannon. I thought of you yesterday. My sister and I went to the Corningware/Revere/Corelle factory outlet store and they had some Halloween candles and decorations in there for like dirt cheap man. I almost bought them for you! LOL You'll have to use this recipe for your 31 Days of Halloween thing this year.
