The surprise is that anyone would eat this as written. This one has way too much going on.
If you use the squash and eggplant, leave out the canned soup and cheese. If you leave the soup and cheese, I don't think it should have the veg cooked with it (other than a variety of potatoes perhaps). And the chicken should definitely be browned before adding to the dish for better flavor.
Rice would be good in this one.
