Chicken Tequila Taquitos

This is the taquitos right after coming out of the pan, they still have the toothpicks in them!

My husband and I tried these today and I have to say they were INCREDIBLE! The prep is a little time consuming, but then again I'd never done it before, now that I have done it I'm sure it will be easier next time. It was also a LOT OF FUN spending time with Rick. We have a convayor belt system set up to wrap them that worked out great! All and all I would say the prep took us about an hour and a half though, but like I said I'd never done it before.

We did stray from the recipe just a little. I used a pound and a half of chicken breast. We followed everything else to a tee, but when we were rolling them we added some shredded monterey jack/colby cheese to them as well. We didn't make the mexi-ranch dressing, we like our taquitos with (yes I know this is strange) sweet and sour sauce! And they were phenomenal!!!

This is the first recipe we have tried from gather, but it will NOT be the last. These were SO GOOD! We actually only made 22, but we filled ours without measuring, it was just by eye, so I'm sure we would have gotten the 24 (probably more) if we had measured. Ours did not turn out as picture perfect as Shannon's but I decided to include some photos of what ours looked like because I thought they looked YUMMY!

These are the taquitos with the toothpicks removed. The one to the right was the one I had to "sample" when they came out so I could make sure they were good!
