Ingredients:
1 box of Spanish Rice flavor Rice a Roni
2 -3 tablespoons olive oil or butter
1/2 cup chopped onions
1/2 cup chopped bell peppers (tonight I used yellow)
1/2 cup chopped celery

1/4 cup chopped carrots
1 1/2 cup chopped smoked sausage or kielbasa
1 small handfull sundried tomatoes
1 14 ounce can diced tomatoes
2 cups water
Saute rice a roni in 2 tablespoons olive oil until starting to turn golden brown. Push to the sides of the skillet and saute vegetables. Add sausage and sundried tomatoes, stir well. Add canned tomatoes water and seasoning packet, stir well. Cover, lower heat and simmer 20 minutes. If all the water is absorbed, let stand for 5 minutes covered.

Notice that I did not add any salt. There is plenty of salt in the Rice a Roni and the sausage, as well as the tomatoes. If you need salt, add it to taste after cooking. A little dried red pepper or perhaps some chopped hot peppers would add to this dish. Experiment a bit with spices. You could come up with a whole new taste.
