stuffed potatoes
1.5 lbs of baking potatoes (about 5 or 6) - 10 points
3T margarine - 3 points
1/2 cup 1% or skim milk - 1.5 points
1/2 cup lite sour cream - 4 points
1/8 tsp pepper - 0 points
2 T parmesan - 1 point
chopped chives - 0 points
bake the potatoes in a 375F oven until tender OR, wash potatoes, drain but do not dry. place damp potatoes in slow cooker. cover and cook and low for 6-8 hours, or until tender. remove from pot.
cut in half lengthwise, scoop out potato pulp. mix pulp with the rest of the ingredients. beat until fluffy, adding more milk if needed. spoon mixture into shells, mound in a little. sprinkle with cheese. place in shallow baking sprinkle with cheese. place in shallow baking pan. bake at 450 for 15 minutes, until hot and lightly browned. top with chopped chives.
