I know most of you are still suffering the effects of Winter, but down here not only is it Springtime, it's getting downright warm and we're already thinking Summer.
Summer makes me think of salads, lots of salads and I wanted to share one of my favorites that can also make a nice addition to a holiday table.
2 cups fresh cranberries
1 orange peeled and diced (seeded)
1 cup sugar
1 package orange gelatin
1/2 cup chopped celery
1/2 cup chopped apple
1/2 cup chopped nuts, your choice but walnuts go very nicely in this
Puree the orange and cranberries in a food processor or blender. Stir in the sugar and let this set for 2-3 hours. Using one cup of boiling water, mix this with the orange gelatin and let it cool. Just as the gelatin begins to set, add the other ingredients and pour into a mold. Chill.
