My "wraps" were actually homemade roti, and were a little small so these ended up more like a taco. The link to the recipe I used follows.
Measurements are approximate.
about 1 T olive oil
1 pork tenderloin, trimmed
1 t ground chili powder
1 t ground cumin
1 t ground coriander
sliced jicama
sliced cucumber
sliced onion
sliced avocado
Dressing
4 T olive oil
2 T fresh lime juice, or to taste
1 T Dijon mustard
1 T fresh parsley, snipped
1/2 t chili powder
1/2 t ground cumin
1/2 t ground coriander
salt and freshly ground black pepper
Combine the oil and spices in a small bowl. Rub the mixture into the pork, coating well. Let rest 30 minutes or chill up to overnight.
Preheat grill over medium high heat. Grill pork about 10 minutes per side, or til desired doneness is reached. Remove from grill and let rest 5 minutes or so before slicing.
Meanwhile, prepare the dressing. Whisk together the oil, lime juice, mustard, herbs and spices. Set aside.
Slice pork and wrap in a roti with your favorite toppings.

Avocado and black beans... hmm... oh yeah... You could actually leave the pork out of this one (though I wouldn't necessarily do that, I think it has enough flavor to stand on its own without. The dressing sounds wonderful.
