- 1 3/4 cups all-purpose flour
- 1 ¾ cup whole wheat flour
- 1 ½ cup oats
- 1 teaspoon baking soda
- 4 teaspoons baking powder
- 1 dash salt
- 1 1/2 cup brown sugar
- 1 cup vegan margarine (Earth Balance is the BEST – but Fleischmanns is good too and is also vegan)
- 4 tablespoons lemon juice
- ¾ cup rice milk
- 1 cup strawberries
- 1 cup blueberries
- 1 cup raspberries
- Raw sugar
Directions
Preheat oven to 400 degrees. Spray cookie sheet with Pam.
In large bowl, combine flour, oats, baking soda, baking powder and salt. Add in sugar, butter (softened – not melted), lemon juice, and rice milk and mix until just combined – it may be easier to mix with your hands
Stir in berries and gently mix completely, but don't be rough with it at this point or the berries will break up.
Prepare 8 x 8 pan
Spray with Pam – thoroughly dust with flour
Place dough in pan, and then turn out onto floured board – cut into four squares, than cut the squares diagonally – put the the triangles on the cookie sheet – and sprinkle with raw sugar
Bake for 15 – 20 minutes till lightly golden on top ---
You just won't believe how good these are!!
