
Everywhere we go here in Sweden,
the Elderberry bushes are in full bloom.

Today I picked some

and made pancakes with them. In Bavaria and Austria these are called "Hollerkuechel" and deep-fried. I chose not to go that route... no equipment for it, and anyway, I don't deep-fry...
Start with two Swedish eggs
Beat them lightly
Add Swedish milk and flour
Beat well and let rest half an hour. The batter for this should be less liquid than for crepes - you want it to stick to the flowers!
Now grasp a head of flower and gently swish it around in the batter,
till all the little flowers are well coated.

Place them, flower side down, in a hot non-stick pan with a little oil.

When they are nice and brown around the edges, turn and press down with spatuala to incorporate the stems into the still raw batter. Fry gently till done.

Serve with sliced Swedish strawberries...
