I made this last night. It was excellent and I will make it again. The spiciness depends on the barbecue sauce you use. I used a bottle I bought on vacation last summer. I don't remember the name. It wasn't supposed to be overly spicy but it had a good kick.
1 recipe pizza dough
toppings:
2 tbsp olive oil
1 small onion, thinly sliced
1/2 bell pepper, thinly sliced
2 cloves garlic, thinly sliced
1 cup barbecue sauce*
2 cups pulled pork barbecue**
1-8 oz package shredded cheese***
1/4 cup grated parmesan cheese
Stretch dough out to fit a large pizza pan that has been sprayed with cooking spray or brushed with oil. Set aside, covered, until ready to bake.
Meanwhile, preheat a skillet over MED-HIGH heat. Add the onions and peppers and cook until softened and browned. Add garlic and cook until fragrant, about 30 seconds. Do not burn the garlic. Transfer mixture to a bowl and set aside.
Preheat oven to 450 degrees (or even higher if you have it).
Pre-bake dough for 15 minutes until browned on the bottom. Remove from oven, top with barbecue sauce, then sprinkle with pulled pork, then the onion-pepper mixture and then sprinkle with the cheeses. Finish by sprinkling with parmesan.
Bake until cheese melts, about 10 or so minutes.
Slice and serve. Will serve 4 hungry people.
Risa's notes:
* Original recipe calls for Neeley's Barbecue Sauce. I used what I had on-hand.
** Original calls for either 2 cups of pulled pork, cooked chicken or beef, chopped
*** original calls for mozzarella. I used a combination of cheddar, provolone, and jack cheeses.
