Another Hungry Girl recipe. I made this the other day for lunch. It was really good.
Loaded w/Veg Pizza
1/3 cup Fiber One Cereal
1/4 cup old fashioned oats, not instant
1/4 cup liquid egg substitute
1/2 cup shredded mozzarella cheese*
3 tbsp chopped mixed veggies**
1/3 cup tomato sauce
1/2 tsp garlic powder
1 tsp Italian seasoning***
Preheat oven to 400 degrees F.
Place oats and Fiber One in a blender or food processor and grind to "bread crumb" consistency. In a small bowl, combine the "breadcrumb" mixture, egg substitute and garlic powder. Mix well.
Place a silpat liner on a baking sheet (or spray with nonstick cooking spray). Spoon mixture onto Silpat and spread out into a circle (larger for a thin crust and smaller for a thicker crust). Allow to cook until the bottom is lightly browned, about 2 minutes and then carefully flip over and cook for another 2 minutes.
Remove from oven and re-spray with cooking spray (if using a naked sheet pan). Cook diced veggies in the pan over MED-HIGH heat for 1-2 minutes until soft. Remove from heat.
Season tomato sauce with italian seasoning. Mix well. Pour sauce over the crust. Top with cheese and then with veggies. Place directly on a pizza stone OR oven rack and cook for 10 minutes.
Season with more italian seasoning or any of your favorite pizza condiments - garlic powder, red pepper flakes, oregano - and serve.
Cut into quarters and eat!

* Original calls for fat-free.
** original calls for 1 tbsp chopped onions, 1 tbsp chopped mushrooms and 1 tbsp chopped green bell peppers. I had a homemade mixture of onions, garlic and bell peppers so I used that.
*** original calls for optional salt, pepper, oregano, garlic powder, onion powder or red pepper flakes so I just used Penzey's Tuscan Sunset seasoning which is a basil-based italian seasoning.
