This was originally a turkey meatloaf but I didn't have any ground turkey, just some organic beef, so that is what I used. This was just delicious.
BBQ Meatloaf
1/2 cup sofrito*
2 cloves garlic, minced
1 tbsp bbq seasoning mixture**
1/2 tsp Old Bay Seasoning
1 tbsp yellow mustard
1 tbsp flat leaf parsley, chopped
2 tsp worcestershire sauce
1 tsp ground cumin
1 tsp salt
1/2 tsp black pepper
1 large egg, lightly beaten
3/4 cup barbecue sauce***
1 cup Iron Chef Southwest Panko Crumbs****
1 lb organic ground beef
Preheat oven to 350 degrees F.
Preheat a skillet and add the sofrito to the skillet. Heat it up and then add the garlic. Saute until fragrant. Let cool.
In a large bowl, combine the barbecue seasoning, Old Bay, mustard, parsley, worcestershire sauce, cumin, salt, pepper, egg, 1/2 cup barbecue sauce, panko crumbs and cooled sofrito mixture. Fold in the ground beef (DO NOT overmix).
Transfer meat mixture to a loaf pan that has been sprayed with nonstick cooking spray. Bake at 350 degrees F for 1/2 hour. Brush remaining barbecue sauce over top. Bake again for another 15 minutes. Let cool for a few minutes and then slice.
Serve with roasted potatoes and corn kernels in butter sauce.

* Original recipe calls for sauteing 1 med red bell pepper and 1 red onion with garlic until soft. I omitted this as I had
some sofrito in the freezer - a mixture of bell peppers, onions and jalapenos that are sauteed and used as a seasoning in caribbean food. So, I added some garlic to the sofrito mixture, let it cool and added it to the meat.
