This is 140 calories a slice and only 1/2 gram fat! So good. Unbelieveable. Thanks to Hungry Girl for it.
Top Banana Bread (page 234, 200 Under 200)
1.25 cups whole wheat flour
1/4 cup all purpose flour
3/4 cup Splenda sweetener, granulated
1.5 cups mashed banana
1/2 cup fat free liquid egg substitute
1/2 cup sugar free applesauce
2 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp salt
Optional topping: I Can't Believe It's Not Butter! Spray and Cool Whip Free
Preheat oven to 350 degrees F.
In a large mixing bowl, combine both flours, Splenda, baking powder, cinnamon and salt. Mix well.
In a medium bowl, combine bananas, egg sub, applesauce, and vanilla. Mix thoroughly. Add the wet to the dry and stir until just blended.
Spoon batter into a large loaf pan sprayed with nonstick cooking spray. Bake for 50 minutes, or until a knife inserted in the center comes out clean.
Allow the loaf to completely cool, then cut into 8 even slices. Spritz with some butter spray or spread on some Cool Whip Free and serve.

We go thru that yummy yellow fruit so quickly some weeks, then all of a sudden...the whole bunch is left come grocery time again. Go figure!
