This was really simple to put together. Even a new cook could do this and everyone would be in heaven. SO easy and so delicious.
Catfish Florentine
4 large catfish fillets
1/3 cup all purpose flour
1.5 lb spinach, washed
juice of 1/2 lemon
3 tbsp unsalted butter
1-3/4 cups milk
1/3 cup grated parmesan cheese
Hyman's Seafood Seasoning*
Sprinkle the fillets with lemon juice and sprinkled with salt and pepper. Fold the fillets in half crosswise and set aside.
Melt the butter in a saucepan. Add the flour. Cook for 1-2 minutes stirring constantly. Remove from the heat and gradually blend in the milk. Bring to a boil stirring constantly, until the sauce thickens. Simmer for 2-3 minutes and then add salt and pepper to taste.
Wash the spinach and put into a pan with only the water remaining from the washing. Cook for 2 minutes until it is wilted. Drain thoroughly.
Stir half of the white sauce into the spinach and spoon into a shallow ovenproof dish. Unfold the fish fillets and arrange on top. Pour the remaining sauce on the top and sprinkle with the parmesan cheese. Bake in the oven for 30 minutes at 400 degrees F. Serve hot with some warm Lemon Butter Bread (at the restaurant this is how it is served).**
Risa's notes:
* Original recipe calls for using salt and pepper. I bought a jar of their Seafood Seasoning while I was at the Hyman's General Store so I used that instead. I also sprinkled it over the top before baking.
** Garlic Bread would be excellent instead.
The original recipe called for Flounder. I served it with Southern Fried Rice (recipe to follow).
