This was yesterday's lunch - another great and simple recipe from Hungry Girl's 200 Under 200 book. I had all the ingredients in the house except for the tomatoes with chiles so I used salsa instead. This was very good and I will make it again.
Spicy Tortilla Pizza Mexicali
1 large low carb/high fiber tortilla
1/3 cup tomato salsa
1/3 cup soy crumbles (ground beef style)
2 tbsp shredded low fat cheddar cheese
2 tbsp Laughing Cow cheese, cut up*
1/2 tsp taco seasoning mix (I use Penzeys)
optional topping:
1 tbsp fat-free sour cream
Preheat oven to 375 degrees F.
Bring a MED-LARGE pan sprayed with cooking spray to MED heat on the stove. Coo tortilla in the pan for a few minutes on each side until slightly firm.
Transfer tortilla to a cookie sheet sprayed with cooking spray. Spread salsa evenly over tortilla, leaving 1" space around the perimeter.
In a small dish, mix the soy crumbles with the taco seasoning. Evenly distribute this over the salsa. Sprinkle with both cheeses.
Bake for 13 minutes, or until edges have browned and cheese is melted. Plate, top with sour cream, and Eat!
Risa's note:
* Original recipe calls for mozzarella cheese (fat-free). Also the cheddar called for is fat-free.
I used salsa BUT the original recipe calls for a Ro-tel Type tomato with chiles, drained. I used the salsa straight from the jar without draining it and it was fine. As long as it isn't too wet, it should be fine.
