This is far from an authentic recipe. I took the original from the Food Writer's Favorites Entrees book. I didn't have the 2 kinds of sausage or the 2 kinds of beans that they asked for so I used hot dogs and black beans. May sound weird but it was very tasty. Everyone ate it without complaint, that was good enough for me.
Easy Hot Dog Cassoulet
1/4 lb bacon
1 lb hot dogs, sliced diagonally*
1 lb chicken thighs, bones & skin**
1-16 oz can kidney beans, drained
2 carrots, sliced thinly
2 stalks celery, sliced thinly
1 clove garlic, minced
1-16 oz can tomatoes, undrained
1 tbsp fresh parsley, chopped
1 tsp italian seasoning***
In a dutch oven, cook bacon over MED heat until crisp. Drain on paper towels. Crumble; set aside.
Discard all but 1 tbsp bacon drippings. Add hot dogs and chicken; cook until chicken is browned and sausage is heated through. Drain well. Add kidney beans, celery, carrots, garlic, and tomatoes with their juices. Season with salt, pepper, parsley and the italian seasoning. Simmer, covered, for 20 minutes. Meanwhile make some white rice.
Serve in large soup bowls - some rice and then some of the cassoulet. Garnish with the bacon.
Risa's notes:
* Original recipe calls for 2 kinds of sausage (neither of what I had on-hand) - 1 lb of seasoned bulk pork sausage and 1 lb smoked sausage links, sliced. I used hot dogs as that was all I had.
** Original did not call for chicken at all but because I only had hot dogs, I put them in to add flavor.
*** Original called for 1 tsp dried basil
Also, original recipe had 2 kinds of beans - kidney beans and white cannellini beans.
