This was tonight's dinner. It was really good. I used Fiber One cereal as my breadcrumbs for the fish and gave the original recipe breading to my family. I am following Hungry Girl recipes so I adapted this one to fit the plan. It was very tasty.
Cracker-Parmesan Crusted Salmon
1 cup oyster crackers*
1/3 cup Ritz crackers, crushed
3/4 cup parmesan cheese
1/3 cup parsley leaves
3 tbsp fresh chives, clipped
1 tsp dried thyme leaves
1 tbsp Old Bay Seasoning
1 tsp garlic powder
soy flour, for coating**
2 large eggs, beaten
splash half and half
olive oil, for frying
4 fillets salmon, rinsed & patted dry***
salt and pepper
lemon, for serving
Using a food processor, grind the oyster crackers, Ritz crackers, parmesan cheese,
parsley, chives, thyme, Old Bay seasoning, and garlic powder. Transfer to a shallow
bowl. Place the flour in another shallow bowl and the eggs and half and half in
another. Set it up like an assembly line for dredging.
Fill a large skillet with enough oil to reach a depth of 1/4" and heat over MED-HIGH
heat. Preheat oven to 200 degrees F. Season the fish with salt and pepper. Coat the
fish with the flour, shake off excess; coat with egg and then right into the cracker
mixture. Working with 2 fillets at a time, fry the fish in the skillet, about 5
minutes all together. Transfer each batch to the oven to keep warm.
Serve with lemon wedge. Rice pilaf (or whole grain pilaf) and a veg are good sides.
