I am part of a group on Yahoo that scrapbook's recipes and then we swap them. I got this from one of my scrapbooks. It is a recipe from a good cyber-pal of mine, one I've known a really long time now (probably 10 years now). She created it.
I decided last week to do some cooking from my scrapbooks, instead of the latest cooking magazines and my cookbooks. I picked out 4 recipes to make this recipe and this was the first one.
I bought some crabmeat at Costco today. I had some Meyer Lemon juice in the freezer and the zest dried in the cabinet, and I cut the butter a bit as I am trying to lose 7 lb before July 1st.
This was just delicious. My husband and I just adored it. I will make it again one day.
You can use any lemon juice you have, or can get. Same with crabmeat, if you can get fresh crab, then do. If you can't, then get the stuff in the containers from Costco. I used the lump crab, not the jumbo.
Mary's Lemon Spaghettini with Crab
½ lb spaghettini, or angel hair pasta
6 tbsp unsalted butter, melted*
zest and juice of 1 lemon**
1/4 tsp kosher salt
½ tsp freshly ground black pepper
12 oz lump crab meat, Dungeness preferred***
1/4 cup freshly chopped parsley****
Cook the pasta in a large pot of well-salted water as directed on package. Do not overcook. When draining the pasta, reserve 1/4 cup of pasta water. After draining, immediately put the pasta into a large, warmed serving bowl (or back in the pot). Quickly toss it with the melted butter, lemon juice, lemon zest, salt and pepper. Mix well. Top with crab and parsley and toss again lightly. If it looks as if it is a bit dry, add some of the reserved pasta water. Garnish with additional lemon zest if you wish.

* I used 4 tbsp butter
** I used Meyer Lemon juice and zest
*** I used ½ container of Phillips Crab Meat, which I got at Costco. If you can get Dungeness crab, from the Northwest, it is preferred.
**** I used fresh lemon balm, for its additional lemon flavor
