I adapted this from The Garlic Lover's Cookbook. This was really good and very simple to put together.

Marinated Portugese Pork Cutlets

1 cup red wine
1 cup water
1/4 cup orange juice
12 cloves garlic -- crushed
1 ts ground cumin
1/2 ts ground cloves
1/2 ts ground allspice
1/2 ts ground cinnamon
1 ts salt
1/4 ts ground black pepper
Pork loin roast -- cut into cutlets
Cut pork roast into 3/4" slices.
Mix together the marinade ingredients in a bowl. Pour over pork and marinate up to 48 hours. Drain off liquid and reserve (when ready to cook).
Preheat a large skillet over MED-HIGH heat. Pat cutlets dry. Heat some olive oil in the skillet and then add pork. Cook until browned, flip and cook other side until browned. Check for doneness after 4 minutes per side. If still pink inside, cook for another 2 minutes.
Place leftover marinade in a saucepan and bring to a simmer. Cook for 4 minutes.
Drizzle over pork when you serve it. Garnish with a sprinkle of chopped cilantro.
Serve with roasted potatoes and a green veg.

NOTES : Risa's notes:
Original recipe calls for burgundy wine.
If using a large pork roast, then brush pork with marinade while cooking. Gives a very nice flavor.
