One of my big problems is always finding the right side dish for Passover and other Jewish holidays. This time I searched The Passover Cookbook for a side dish that did not include potatoes, sweet potatoes or carrots as I had no sweets or carrots in the house and was already sick of potatoes. I found the following dish in the book and thought I would try it out. It came out pretty good altho' next time I make it I will change the seasonings a bit.

Savory Matzo Farfel

2 large onions -- chopped
1/4 cup margarine -- * see note
3 cups matzo farfel
1 ts salt
1/2 ts black pepper
1 ts paprika
2 1/2 cups boiling water -- or chicken broth
Mince the onions. In a large pan or skillet, melt the margarine and saute the onions until tender. Add the matzo farfel and stir until lightly browned. In a large bowl, combine the seasonings and the boiling water (or chicken broth). Add slowly to the skillet and cook over low heat, stirring frequently until all the liquid is absorbed.
Serve as a side dish with meat or poultry.
