This isn't really a recipe - more of a dish that I just put together with leftovers. I had some leftover cooked chicken, leftover cooked spinach with garlic, and a jar of salsa verde. I put it all together. You will see no chiles mentioned but they are in the salsa - if you love hot stuff (like I do), you use a really spicy salsa. I used a medium one as my son was also eating this and I didn't want him to refuse eating it. Hubby & I enjoyed them.
I softened some whole wheat tortillas. I spread them each with 2 tbsp Boursin cheese, topped them all with some chopped cooked chicken, a sprinkle of shredded monterey jack and cheddar cheese mixture, and a drizzle of salsa verde.
I rolled them up. I spread some salsa verde on the bottom of a small baking pan. I put the burritos in the pan, covered them with more shredded cheese, and baked them at 400 degrees F for 20 minutes until the cheese melted and the insides were all melty.
I served them with some sour cream too. I love sour cream in tex-mex food. Mmmm...
They were excellent with the Delmonico Potato Casserole and some mashed butternut squash that I added some half and half too and I sprinkled in some salt.
These were just delicious. See...leftovers can be really tasty.
