The original marinade recipe came from Steven Raichlen's "How to Grill" cookbook. He used it to marinate whole pork tenderloins.
I buy whole pork loins when they're on sale and then cut them into chops and freeze them. Since I had plenty of loin chops on hand I decided to use them for this recipe. I adjusted the ingredients, to better suit our tastes.

Mojo Marinade Ingredients
Approximatley 1/4 cup of olive oil.
10 garlic cloves, peeled and sliced
2 teaspoons ground Cumin (or to taste)
1/2 cup fresh squeezed lime juice
1/2 cup orange juice
1 teaspoon Kosher salt
Freshly ground black pepper, to taste
1/4 cup water
1 tablespoon of freshly chopped oregano
1/4 to 1/2 cup of fresh chopped cilantro
Pork chops or pork tenderloin.
Heat the olive oil in a saucepan over medium heat. Add the sliced garlic and cook until it starts to brown lightly. Add the cumin, lime juice, orange juice, water, salt and pepper. Bring to a rolling boil. Remove from the heat and add the oregano and cilantro. Stir and allow the mixture to cool to room temperature. Place pork in a non metallic dish or a large ziploc bag. Pour about half of the marinade over the meat and refridgerate at least 3 hours. Reserve the rest of the marinade to use a sauce when serving, just reheat it just before the chops are done. Grill.

For the onions all you need is
One large sweet onion such as a Vidalia
Small amount of olive oil
Salt and pepper
Slice the onion into large rings about one half inch thick. Insert a skewer all the way through the onion, this will hold the rings together for easy grilling. Brush the slices with olive oil and salt and pepper to taste. Grill.

For the tomatoes check out my roasted tomato recipe. This time I used small slicing tomatoes and Cherry tomatoes which I cut in half. I also added garlic, hot banana peppers, salt, pepper, fresh basil and a drizzle of olive oil. We cooked them on the grill.

I love roasting my tomatoes for tomato sauce....
I'd cook mine a little slower and lower, to help eliminate the char grilling (it's carcinogenic). How did you serve up your tomatoes? Did you nestle the loins in it?

We do the pork loins like that too, we buy them big and slice it how we want it and freeze it.But the sad thing is we are out,I just cooked up the last of it a few days ago...another sale should be soon..:))

Ms Meacham, I have a thing for the "crunchies" on my grilled meats, I'll take my chances with the carcinogenics...you only live once! We just had the tomatoes on the side, I did steam a wild rice, brown rice mixture and ended up putting some of the tomatoes on top.
Yes Jenna, they should be going on sale again here soon. I think I'm down to one more package of chops myself.

You know Kim, I've beginning to believe that you are my long lost twin...lol. I hated all potatoes except french fries and potato chips. Mom would make boiled potatoes and they'd do the same thing to me, they made me sit at the table until I ate them or they'd serve them to me again in the morning for breakfast...this was before microwaves so they came straight from the fridge to me. I would swallow chunks whole and chase them with water, I always ended up getting sick. I did that with a lot of things they forced me to eat...like liver and lamb too. BLEK, I still don't like either of those.
I am with you on the liver! YUCK!! I haven't tried lamb since I was little bitty and I don't remember if I liked it then or not....
I can't even stand the smell of lamb, but I'm told I make an excellent leg of lamb...funny thing is, I used to prepare it all the time but I won't eat it.
The Publix deli near us has a rotisserie chicken "mojo" flavor, and its awesome!
LOL lori, I'll eat your share of tomatoes, no problem.
But, I think a lot of why I didn't like them is because they kill my stomach. I've had digestive issues all of my life..now I just take lots of meds so I can eat pretty much anything I want. Sometimes I think we don't like things instinctively, maybe?
