We have an over abundance of cherry tomatoes. It seems someone must have found it amusing to switch the tags on the tomato plants at the nursery. We thought we were purchasing slicing tomatoes. Thankfully we purchased tomato plants from more than one source, but in the meantime, what to do with all these tiny tomatoes?
Here is one use I found them. This is a cool, refreshing and healthy salad. I made it to accompany blackened tuna steaks from the grill.
I used cherry tomatoes because that is what I have, feel free to use any type of tomato chopped into bite size pieces. Also I happen to have fresh cilantro but not fresh Mexican Oregano, if you have access to fresh, by all means use it!
Ingredients
2 ripe avocados, cut into bite sized pieces
Approximatley 1 1/2 cups cherry tomatoes, sliced in half
2 tablespoons fresh Cilantro, chopped (or more, to taste)
The juice from 2 fresh limes
Approximatley 2 Tablespoons vegetable oil
1/2 to 1 teaspoon dried Mexican Oregano, crumbled
1/2 to 1 teaspoon ground Cumin
1/2 teaspoon garlic salt
Freshly ground Black Pepper (to taste)

Gently mix all ingredients in a medium sized bowl and serve immediatlely or refridgerate until ready to serve.
