Well, Shannon inspired me to prepare Irish Soda Bread...I used a recipe that was only slightly differnent from her's in amounts of ingredients and baking method.

I greased a cast iron dutch oven and preheated it in the oven to 425 degrees. Placed the dough inside and put the top on for the first 25 minutes of baking.

Remove the lid and bake an additional 15 minutes, remove from oven.

I prepared my corned beef and veggies in my slow cooker.
Ingredients include Corned Beef, new potatoes, baby carrots, rutabaga, turnips, onion (removed before serving), bay leaf, garlic and the seasoning packet that came with the meat. I added fresh cabbage wedges about 1 hour before we ate to keep them a little firmer, the way we like them.

The meat was so tender it fell apart with a fork.

Katrina, I want to try that method of baking bread with a yeast dough. It was so easy and it browned so perfectly, even on the bottom which is hard to do in my oven with anything.
