Ever since I saw Rachael Ray make meatloaf patties a few years back, I've been playing with her original recipe. Last night I wanted to make meatloaf patties but had no idea how I wanted to flavor them. I started searching my cookbooks and found 2 that sounded good. One was a meatball recipe and the other was meatloaf and I mixed the two together with what I had on-hand. They came out just excellent. My son loved them and had no idea how good they were for him. I mixed a recipe from Deceptively Delicious with one from Dana Carpender from her Slow Cooker book. These came out excellent.
This was easy enough for my 12 year old to help me in the kitchen. He mixed the meat together and I scored the meat into 6 equal parts. I cooked them. We had a good time in the kitchen. Almost any age can help mix the stuff together.

BBQ Meatloaf Patties

1 lb ground turkey
1 cup whole wheat breadcrumbs -- from 2 slices bread
1/2 cup cauliflower puree -- * see note
1/4 cup bbq sauce
2 tb grated onion
1 tb reduced sodium soy sauce
1 clove garlic -- minced
vegetable oil -- for sauteing
4 whole wheat hamburger buns -- optional
In a large bowl, combine turkey, breadcrumbs, cauliflower puree, bbq sauce, grated onion, soy sauce, and garlic. Mix well, with hands, to form a cohesive mixture. Score with hand to make 6 even patties.
Preheat a large skillet over MED-HIGH heat. Add some vegetable oil. Let it get hot, but not smoking. Place patties in and cook for 6 minutes on each side, making sure to sear them well.
Make sure they are cooked thoroughly, still a bit juicy in the center. When I turn off the heat, I leave the patties in the skillet with a cover on it for 5 minutes - to finish cooking. This usually ensures a moist and fully cooked pattie (or hamburger).
Serve with rice pilaf and snap peas.

NOTES : Risa's notes:
* To puree cauliflower - I used frozen thawed. I cooked in the microwave for 7 minutes on HIGH (my microwave is 1450 watts, if yours is lower than cook it for longer). Puree in food processor with 1 tbsp or so of water. Must be a fine puree.
Grind bread for breadcrumbs in food processor, or with hand chopper, until fine.
Onion must be grated as children will pick out chunks of onion (mine does). Also, puree must be fine or they will notice something funny with their meatloaf patty.
