Next time you bake chicken, coat it differently.
Use 2 cups of rice crispy
1/2 cup grated parmesan cheese
1 envelope of 1 oz. Ranch salad dressing mix
2 egg whites beaten
8 skinless, boneless chicken thighs. About 5 oz. each
Preheat oven 350
Spray large baking sheet with cooking spray
Combine the rice cereal, parmesan and ranch dressing and mix in a large bowl
Put the egg whites, beaten, in a med. bowl. Dip each chicken in the egg and then in the cereal and coat evenly.
Arrange coated chicken on the prepared baking sheet. Bake until gonlden and juices are clear when pierced.
About 20 to 25 minutes. Serve hot.
