Tonight as a side dish I decided to make my own rice pilaf to go with the crispy pork chops. So I cooked some brown basmati rice in the microwave (3/4 cup of rice to 1.5 cups of water, a touch of salt and 1 tsp oil - cooked on HIGH for 4 minutes and then finish cooking it on MED-LOW - #5 - for 17 minutes. Let it rest for 5 minutes, then take a fork and separate the rice kernals). Make sure it is totally cooked, and all the water is absorbed. Take a bite and make sure the seasoning is right too.
Then preheat a skillet over MED-HIGH heat. Add 1 tsp of oil, brush it around, then put 1/2 onion minced in and saute until softened, not necessarily browned. Add a clove of garlic minced and cook for another 30 seconds. Add the rice and stir it around then add a bit more oil if it is dry. I added some Penzey's Mural of Flavor seasoning then (use what you have - something aromatic). I stirred it a bit more until totally coated and then I served it with the Pork Schnitzel. Just delicious.
Easy to do.
