I used to use my old timey grinder to shred the Velveeta cheese for the pimento cheese until about a year ago I read where someone melted their Velveeta Cheese Loaf and added all the ingredients! Well, that is the easiest way to go and it still is delicious!
Here is my recipe and I hope you enjoy it.
1 Load Velveeta Cheese Loaf
2 large jars pimentos (chopped)
3 large cooking spoons of sweet relish (more or less according to your preference)
1 cup Miracle Whip ( more or less according to your preference but this is what i start with)
12 boiled eggs, chopped up. I use my potato masher
I slice the Velveeta cheese into small hunks and start with 5 minutes and stir. If it is not completely melted, I stir and stir and if I feel it will not melt with the stirring, I put back in for 1 minutes at a time.
Then I chop my boiled eggs and add to the melted cheese. Then dump in the pimentos and relish and mix up. Then I add the Miracle Whip. After stirring up really good, I determine if it tastes to my desiring, if not I add accordingly. Then after mixing well put in fridge to cool.
We are having pimento cheese sandwiches with our homemade frugal chili tomorrow. after the morning worship servie. I hope you enjoy this as well.
