Yesterday the boys and I spent some beautiful hours on the beach, but when we got home the clouds soon turned dark and threatening. Before long we had thunder, lightening and all of a sudden it all broke loose.
The winds were so strong that the boys yelled tornadoes and ran for cover. The wind blew right through our home, and it rained so hard that we had to turn up the volume on the television to hear.
The storm knocked over several of my planters outside, and not too far south of us it knocked over an entire trailer.

The turned over planter below, is the one where I have planted mango seeds. This will be the first time, so I am hoping for some good results.

I had to put several of my planters under the roof, as the rain was coming down too hard.


When the worst part of the storm had passed, my oldest son came running to tell me that the mangoes were down. At first I did not think much of it, but when I looked out the window I saw dozens of mangoes on the ground. I knew it was only a matter of time before the bugs, birds and squirrels started enjoying their sweetness, so I put on a pair of sandals.

It was still raining a bit, and I was lucky to get inside again without getting hit by a mango or two. In the bucket I had 44 dirty mangoes, ready to be cleaned and eaten.

Some of the mangoes had small tears from their hit to the ground, so I knew I had to use them for something. I peeled them, and then I decided that mango ice cream would be a treat everyone would enjoy.
I put the mango pieces in the blender and it turned into a beautiful puree. Last time I made mango ice cream I made it from leftover cream and sugar, but cream is something we only have in the house around Christmas time. I did have a bit of Breyer's all natural lactose free vanilla ice cream, so I decided to mix this with the mango.

Last night I stirred it every half hour to an hour, and this afternoon we all enjoyed some wonderful fresh-tasting mango ice cream while another storm was going on outside. I drizzled a bit of chocolate powder on the boys ice cream.

I think my husband's cousin has come to live with us at the right time, as the falling mangoes surely brings memories out from my husband and his cousin's childhood in Jamaica.
Now, I am pondering about what mango experiment I am going to come up with next. On Sunday I made Mango cake, and it was such a success that I might have to repeat it.

I've never tried to make home made ice cream and I've never heard of Breyer's lactose free ice cream either.
Good save on the mangoes. So how is your house guest working out?
Rose, my mother used to make homemade ice cream all the time, but I have not done it very often, as both of my boys and my husband are lactose intolerant.
Breyer's lactose free vanilla is the only lactose free ice cream I have found other than soy based ones or sorbets, so whenever it is on sale I make sure to get it for the boys. They can eat a little bit of normal ice cream, but not too much, and my husband can barely eat any ice cream.
....and the house guest is working out good so far. It helps that he works afternoons and evenings. He leaves the house around noon and doesn't come home until after midnight.
Breyer's is all we buy but I didn't know about their lactose free ice cream.

It has been a long time. When I was growing up we had a crank ice cream maker and it took forever. I don't like ice cream, to be honest.

Amanda, how can you not like ice cream? I could live of ice cream:) I have heard of ice cream makers, but I have never seen one, as my mother always did it the old fashioned way.

Nope have never made ice cream. A local geocacher does and always brings it to events. Yet another thing I'll miss when I move.

When I've made ice cream it's always been with an electric ice cream maker. ;) We don't have one, so the last time I made any was at my parents' house.
I grew up on a farm, and we usually had an abundance of goats milk. We used that to make ice cream in the electric ice cream maker on a regular basis. Wow, does that bring back memories.
Nora I can imagine what memories it brings back. I too grew up on a farm, but not on a dairy farm. My aunt and uncle had a dairy farm and they always served homemade ice cream for dessert. My aunt had a habit of adding cognac and other dessert wines to the ice cream though, which the children would have preferred left out.
After reading about your Mango harvest recently I wanted to buy some, but I don't know how to tell if they are ripe. I've never had one!
Alex....a warning...the ones you get in the store are probably not going to be as sweet as the ones we have, as they are usually picked green.
However, a good ripe mango is red/yellow in color and not green. These are hard to find at the store, and you might just have to find a greenish/redish one and let it ripe at home.

Next up? I'm thinking a mango tart. Or maybe mango pancakes. I wonder how a peanut butter and mango icing would work on chocolate cake... I've cooked up a peanut butter and peach icing before (literally cooked), and that was quite yummy.

I do make homemade strawberry ice cream sometimes....I've done a few other flavors, but strawberry seems to be a favorite. The mango looks good though.
Jax, when I was pregnant with Roshane I craved my roomates mother's homemade strawberry ice cream. I think I ate too much, as I have not been a huge fan of strawberry ice cream since then:)

And, the crepe recipe that you posted over the weekend, the girls and I loved it. We ended up buying a box of mangoes the day before and used mango in the crepes instead of strawberries.
We also got mango sausage at Trader Joe's which was incredible-- chunks of mango were mixed in with the sausage meat. I know you dont eat meat, but the boys might like it as a dressing on italian suasages or something. I never thought it would taste as good as it did.

Here is an easy 1-2-3 mango dessert that my niece served us once and I have to admit, for being so simple, it was delicious....but then I like mango anyway I can get them!
Mango cut in bite-size pieces - use juice also, box of yellow cake mix - Duncan Hines is moister - and a bit of butter (optional) - chopped nuts (optional).
Put mango pieces and juice in deep glass baking dish, cover evenly with the cake mix, dot with butter and sprinkle with nuts - place in 350 F oven and bake until bubbly.
The moisture/juice from the mangoes will seep up into the cake mix - serve as is or with a scoop of ice cream
