Dinner tonight was a quick and easy affair. I was too lazy to go grocery shopping today. That meant we made do with whatever we could find in the kitchen to throw together.
A few weeks back, I bought a box of chicken patties. Not the normal size box, but a large box containing two large bags of chicken patties. You know the kind that are made for chicken sandwiches. Well, one bag is enough to make at least three meals for our large family. Remember we have 4 adults, one teen that is the size of an adult, and three young children in the house. Tonight's meal started from that box.
The patties are fully cooked but frozen. We placed them in a single layer in a baking dish. Cooked them at 350 degrees in the oven after spooning a bit of pizza sauce on each pattie. When they were warmed through, we covered in shredded cheese and allowed it to melt before eating. OH MY! They were great! We made tater tots, macaroni and cheese, and baked beans to go along with it.
It was quite a delicious meal. The best part is I have enough leftovers that I will not have to cook lunch tomorrow.
As soon as dinner was over, I came right back to my computer to return to gathering. I'm about gathered out for the night though. I'm not sure I will be able to finish the task I'm working on now. But, we shall see.
