Makes 1 serving
1 (4 ounce) salmon filet
1 1/2 tsp fresh lemon juice
1 tsp Cajun seasoning mix
1 cup mixed veggies (broccoli, cauliflower, snow peas, pearl onions or quartered onion, carrots, turnip chunks - whatever your favorite steamed veggies are)
Preheat oven to 325 degrees.
Rince the salmon filet and pat dry. Place the filet in the center of a large triangle of parchment baking paper on a baking sheet. Sprinkle with 1/2 the lemon juice and 1/2 the seasoning. Place the veggies on and around the filet. Sprinkle with the rest of the juice and seasoning.
Fold parchment paper to form a tent over the filet and veggies, leaving room for steam expansion at the top. Bake 20 to 25 minutes. Open paper packet, being careful of escaping steam. Salmon is done when it flakes easily with a fork.

This would also be good with the salmon chunked up with some cream and parmesan and served with the veggies over pasta...
