I think I got this recipe from a Reader's Digest magazine, becuase I have "RD" in the corner of the card, but that could also be someone's initials, so who knows.
I love key lime pie, but the real thing would literally send me into a brief, unavoidable "coma", so it's one of those things I gave up for life. ha.
This isn't exactly the same, but it's a pretty good facsimile for those of us who can't have the real thing.
This recipe makes 8 servings.
1 pkg sugar-free lime jell-o
16 ounces fat-free, sugar free key lime yogurt
8 ounces sugar free whipped topping.
1. In a small sauce pan, bring 1/2 cup water to a boil. Pour into a medium bowl, add the jello and stir to dissolve.
2. Stir in the yogurt until blended and then fold in 3/4 of the whipped topping.
3. Refrigerate for about 30 minutes, and serve with the remaining topping.
