July 26, 2007 Help! Recipes for toaster ovens needed!

My brave oven has died! Funeral arrangements are being made. However, until a new stove is purchased, I am in need of some recipes that work well in toaster ovens. We are a diabetic houehold, so I do not need recipes for high calorie deserts. The burners on the stove still work fine and it will probably be a couple of monthes until we can afford to replace it. I only bought the toaster oven about two weeks before the oven died so I don't have much experience with it. Any help will be appreciated!

· 1 pound thickly sliced smoked turkey from deli counter
· 1 tablespoon chili powder
· 2 cups shredded slaw cabbage
· 1 to 2 chipotles in adobo sauce
· 1 cup tomato sauce
· 3 scallions, chopped
· Salt and pepper
· 4 (12-inch) flour tortillas
· 1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
· 2 tablespoons vegetable or olive oil
· 1 cup sour cream
· 2 tablespoons chopped cilantro leaves or flat-leaf parsley
· 1 vine ripe orange or yellow tomato, seeded and finely chopped
Directions:
Preheat your toaster oven to 400 degrees F or high. Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.
1/4 C. butter or margarine
1/4 C. flour
2 C. milk
1/2 tea. salt
1 C. shredded Cheddar cheese
1/2 C. Parmesan cheese
5 C. sliced, cooked and peeled potatoes
1/4 C. bread crumbs
In a saucepan, melt butter over low heat. Stir in flour until smooth. Gradually add milk; cook and stir over med. heat until mixture thickens. Remove from heat and add salt and cheeses. Stir until Cheddar cheese melts. Place potatoes in a prepared 2-qt. baking dish and add cheese mixture, stirring gently to mix. Sprinkle bread crumbs on top. Bake uncovered at 350 degrees F for 30 to 35 min.
Makes approximately 6 to 8 servings.
Today we used both the toaster oven and the stove to make breakfast sandwiches with english muffins, eggs, canadian bacon and cheese. I fixed the multigrain english muffins and Hubby fried the eggs and the bacon to assemble the sandwiches.
Prep: 10 min, Cook: 15 min.
* 20 golden round crackers, crushed
* 1/2 cup grated Parmesan or cheddar cheese
* 1/3 cup fresh parsley sprigs, minced
* 1/4 cup melted butter or margarine
* 4 catfish fillets
Mix first 3 ingredients in a bowl. Brush butter on fillets; coat each fillet with the cracker mixture. Place on foil-lined baking tray. Bake at 400°F for 15-20 minutes, or until fish flakes easily with a fork.
Prep: 5 min, Cook: 30 min.
* 8 firm bananas, cut into chunks
* 1/2 cup butter, melted
* 1/2 cup cinnamon sugar
Place banana chunks in a small baking dish. Top with melted butter and cinnamon sugar. Bake in the oven or in a toaster oven at 350°F for 25 to 30 minutes.
