As we all know it's sometimes difficult to stick to our diet. My DH and I are on a fixed income, which only serves to make our diet difficult being well-rounded. (We are both diabetic)
One of the things I do is buy larger portions of foods that are in-season and less expensive. I put them up for the times of the year when you may love to have those things, but cannot afford the higher prices. I usually freeze them. This summer I have put up fresh strawberries, vidalia onions, green, red, and yellow peppers, fresh green beans, and tomatoes. During the winter I find it so easy to pull out some of these items to make stir-fry.
Eating well is so important to those of us with diabetes. I know that since watching my diet I have, over time, lost 30 lbs. to my and my doctor's delight!
