Once I made little herb packets I stuffed them in the hens, put a tab of butter and one leaf of sage under the skin on either side of the breast and bound them up and put them on the rotisserie. They looked pretty packed in there...I have to bind them really tight or when they start cooking they grow and hit the back heating element.
Once on the spit I turned it on and sprinkled them with Sicilian Sea Salt, Sweet Spanish Paprika and pepper.

While they were cooking.....

I started the red potatoes....then rough mashed them. No picture...as I forgot to take one. ;)

and started frying the bacon for the beans...

I also cooked the packets from inside the hens for our dog Fritz. Can't forget the 'spoiled one' lol

The beans went in the bacon to heat through....

And Fritz's dinner was done also. I added cooked rice to his. He was whining outside as he could smell all the smells coming from the kitchen....so I brought him in to eat his dinner so we could eat in peace....lol

I think he enjoyed it as it was gone in seconds flat... ;)
Ours finally looked done....

So I raised the lid and checked it....

YEP!!! Done!!
On to our plates and time for us to eat. Mmmmm!!!

Now.....time for a nap. ;)

I just love my Baby George, don't you? Our doggie gets the dark meat since neither one of us eat it, chicken is her favorite food in the whole world.
