I haven't heard the Dave Matthews version of Watchtower, to my recollection, but I did see/hear parts of a documentary/concert recording of him and his band that I enjoyed a lot (I enjoyed everything I heard, but I only saw parts of it).
I only know Pearl Jam/Edddie Vedder by name and from reading guitar magazines. I'm 50 and my older son is 16- so far, my son hasn't gotten into PJ/EVedder and I just don't know much about them except press release stuff, not that this info turns me off, there's just a lot out there to listen to... (but I will listen now!)
I love Johnny Cash- I'm really into the American Recordings and Live at Folsom. I do have a CD of Cash/Dylan duets- I forget if it was recorded around the time of Nashville Skyline or some other time, but it's pretty good, I just haven't listened in a while.
The Grateful Dead are not my favorite, in the sense that I find their work very "up and down" in quality, but they can be great. I don't think I've heard this version (or not more than once...) for some reason.
Jack Johnson seems to echo in my memory, but I think it is more an awareness of an existence than any actual experience with the music. This will go "on the list."
I don't know Cat Power or Jim James (great name!) at all- more to check out.

Mavis Staples and her whole family are very talented and a joy to listen to. I don't listen to them as much as I should (since my kids grew up to be teenagers, I don't play my stereo very much any more: I listen instead to my iPOD, but only a fraction of my CDs are on the iPOD, and none of my LPs are there).
The end of The Last Waltz, with the Staples Singers performing The Weight, is astonishing. I recommend the DVD to anyone and everyone.
