Finally the season of New Apples is upon us!

As the saying goes,
I love them hot,
I love them cold,
I love them in the pot,
Nine days old…
Well, not quite nine days old, unless it's applesauce and I made a lot of it…
So maybe:
I love them stewed
I love them cold
I love them in a cake
But not old!
One of my favorite fall desserts is presented here.
Start with a good mixture of different apples. I use organic, because they taste better.
Core and cut into slices. I leave the skin on. This way, they hold their shape a bit better. Also, most everything that is valuable in an apple is directly under the skin, and if you peel them, you lose that. But you are free to peel yours, if that suites you better!
Simmer in a little water for 15 to 20 minutes, depending on how soft/mushy you like your cooked apples. I add cinnamon and let it simmer with the apples. I love the aroma this creates in my kitchen/whole house. If you don’t like cinnamon, you could add the peel of an organic lemon and let it cook with the apples, or a little vanilla (add this after cooking…)
Serve it up, hot or cold. Add sugar to taste (I use none in the fall. If the mix of apples is right, and they are organic, this will be delicious even without sugar!)
If you want to gild the lily, add a little whipped cream, or, if you want to go vegan, some soy yoghurt with some cocoa mixed in, sweetened to taste. That’s my favorite version right now.

I do unfortunately believe that it might be a little cheaper to serve old apples from Chile rather than new, local ones!!

also, the health benefits are not all,or even mostly lost by peeling...i live in the "Apple state of WA" and tried to post my health benefits apple article a few times now,but glitches prevent.....will try again soon...nice product photography!

Gayle, I hear your thoughts on this, but I would like to point out most respectfully that apples treated with pesticides are not just treated on their skin. The concentration varies within the apple, but there are residues all through the apple. That is why I buy organic.
