My husband made this tonight, just made it up out of nowhere. It was SO good I had to share. As some of you may know, he's diabetic and his blood sugar stayed in range after eating this.
Jay’s Cream of Broccoli Chicken & Rice
1 ½ lbs. Chicken
1 serving chicken bouillon
1 can Cream of Broccoli
Milk
Boil chicken with chicken bouillon until done.
Drain chicken, cut in half.
In a bowl, mix 1 can Cream of broccoli soup with half can of milk
Pour mixture into 13x9 casserole dish
Add chicken to casserole dish with mixture.
Spoon broccoli mixture over chicken.
Sprinkle with Sharp cheddar cheese.
Bake at 350 for 20 minutes.
Serve over oven cooked Brown rice
¾ cup uncooked brown rice
1 Tbls Butter or margarine
1 serving chicken bouillon
1 ½ cup boiling water
In 1 quart casserole dish, combine boiling water, butter and chicken bouillon.
Stir until butter is melted and bouillon is dissolved.
Stir in uncooked rice.
Cover.
Bake at 350 for 45 minutes.
Fluff with fork.
