I have very little time cooking, since all the housework and entertaining and playing take up all my time.
So i am looking for healthy, quick and inexpensive meal - ideas for my 2 year old. Every idea is very appreciated.
My husband works graveyard, so i cook him a big meal before he goes to work. So i just need a little help getting some healty meals for my 2 year old. She eats everything, but she does not care for meat to much.

I love my crock pot
Take a can of reg. biscuits.
Place each one in a cupcake or muffin tin. Press dough around the sides so it forms to the inside of the tin. Put a spoon of pizza sauce in each one. Add your favorite pizza toppings and bake at 425 for about 10-12 minutes. You have mini pizzas.
Our kids use to love these and the older they get, they'll love to help or add their own toppings. Leftovers can be refrigerated. This makes 8-10 depending on type of biscuits used. We found that the smaller biscuits work better than Grands.
Hmm, I may make these this weekend for our granddaughter. She'll love them.

bread sticks popped in the microwave with mozarella cheese, swiss, or cheddar.
use left over rice, pop in microwave with some veggies added, especially broccoli, peas, mushrooms, some tomato sauce or... So much you can do with leftover rice.
Bean salads are a favorite with kids, too, especially littles because it's easy to eat with fingers.
I agree with Crock Pot cooking as mentioned above. Pinto bean soups, lentil soups, split pea soups, tomato soups.
