So I was leafing through a magazine (Better Homes and Gardens from April) and noticed an interesting looking sandwich: Cucumber slices, spinach, cheddar cheese and honey mustard toasted. It looked great!

I love whipping up gourmet sandwiches: poached chicken with hummus, red pepper, spinach, cheese, honey mustard on artisan bread is one favorite.
