I think my sweet pickle relish will turn out much better this time. I actually put the sugar in it this time. LOL I tried to get it done before my grand-daughter got here and I had just sit down to rest and they drove up so that was perfect timing.
I used the bread and butter pickle packages that can be bought at the store and added 6 3/4 cups white vinegar and 7 cups sugar. NOTE: If you don't add the sugar it will be sour. LOL see my post at

I had a large washtub full of cukes that my son had picked in just one day! They were too huge to pickle so I sliced four -one gallon bags full for fried, casserole, soups, and fritters. These are drying ready to be cut up.

I added the spices, vinegar and the sugar in the pan and brought it to a boil. Of course, you can see the sugar in the spoon? I wanted everyone to know I did put sugar in it this time, as mentioned above.

The shredding was going slower than I'd like but it was going good so I won't complain. It really did add up fast as you can see in the next pic.

See is does add up fast and especially with the food chopper that I bought. Well, rather had my daughter pick up at Wal-Mart on her way to her house. It was a finger saver because when I use the hand held shredder I catch my fingers and fingernails. Ouch!

I am so glad that I purchased this $20 chopped from Wal-Mart. I was so dreading shredding all these cucumbers with the hand held shredded that I had. This only did a small about of the cucumber at one time but didn't turn it to juice and it worked great!

This part is funny! I forgot to take out the spacer that they
had put between the bottom of the chopping cup and the chopper knives. I looked down when I dumped that cup of chopped cucumbers and wondered what is that brown? I got to checking and it had softened, it was cardboard, and I had chopped it. I guess I was adding more fiber to my relish.

I got my canner that was my precious mama's and filled it with water and got it to boiling and did two cookers with four quart in each. I was so excited! 8 Quarts, I have more but I will save the left over juice and put up more when I son comes in from the garden again.

Here they are ! 8 quarts! I am so proud of them and they look and smell so yummy! Oh, BTW! I had my five month old grand-daughter puttering around in the kitchen in her walker part of this time so she was screaming and playing with me so you can imagine how much fun we had! I can't wait to cook a pot of beans and sink my teeth and taste buds in this SWEET pickle relish. Once again a joke referring to the post mentioned above. God bless you!

Great post!!! I'm not a relish eater, but my hubby and daughter love it on burgers, hotdogs, in sloppy joes.
