I am always looking for frugal dinner ideas, and one of the ways lower dinner costs is by using what is in season and on sale.
This week my local grocery store had
A dozen eggs for $.99
Squash for $.99/lb
5 lbs potatoes for $1.99
While I have been a vegetarian for more than a decade, my husband is a big meat eater. The kids are not big meat fans, and since my husband is trying to lay off the meat at times, I decided just to cook vegetarian tonight.
I made squash and potato patties and scrambled eggs.
For the veggie patties I used:
1 squash
2 potatoes
1 egg
I shredded the potatoes and squash, heated it in the microwave for 1 minute. I drained the mix, and then I added an egg, some salt and pepper. I put it on the pan over medium heat, and turned the patties once they browned.

For the scrambled eggs I used five eggs.
It was a great meal, and the squash and potato patties were awesome. We used some ketchup for the patties, but I think next time I will make my own tomato basil sauce to go with it. I did not have any basil in the garden, otherwise this would have been great.

The cost for this meal was was 1 dollar for the four of us, so even if you do make a tomato salsa or sauce and/or add a baked chicken leg, it will still be a very cheap and tasty meal.

My daughter and I are trying to get my husband to cut back on meat by making more nights non meat nights. We found a lentil mix at costco and my daughter made it with rice...it tasted like chili, but without the meat. I was surprised he liked it so much he bought more.
I did a bunch of cooking today .... freezing meals to take to the other house so that I won't have to cook on school days - at least not for the first week. The stew that I made (using "reduced for quick sale" stew beef) turned out really well; haven't tried the spaghetti sauce (also made with quick sale meat and veggies left over from our open house last week) yet but I'm sure it will be yummy, although perhaps a bit spicy (had lots of hot peppers left - they were on for 5 for $1 last week at our market)
We eat meatless at least 5 nights a week. I eat no read meat, I eat chicken maybe once a month, I eat seafood once or twice a week.
We love spaghetti squash, grew them in our garden this year!
i had chinese food -- honey chicken & white rice.
