I wanted something quick and easy to fix for supper one evening over the weekend. I happened to look through the summer '09 Kraft Food & Family magazine and found this gem. You cannot get any easier than this, and it was surprisingly tasty for something so simple. My husband thought it tasted a bit Hawaiian. I didn't have the pineapple rings so I simply used pineapple chunks. The recipe also is for the packets to be prepared on the grill. We were out of charcoal (and don't do gas) so I just threw them in the oven at about 400 degrees for about 35 minutes I think. Also, this recipe is for one packet, so just use one more of everything for as many packets as you need to make.
Barbecued Chicken Packet
Ingredients:
- 1 boneless skinless chicken breast
- 1 pineapple ring
- 1 green pepper ring
- 1 Tbsp. bbq sauce
Directions:
- Heat grill to medium heat. Place chicken in center of large sheet of heavy-duty foil; top with remaining ingredients.
- Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
- Grill 15 minutes or until chicken is done. Cut slits in foil to release steam before opening packet.

I often do chicken in foil packets on the BBQ... salsa, onions, black olives and lots of garlic comes out very nicely too
