http://media-files.gather.com/images/d723/d484/d745/d224/d96/f3/full.jpgIt's nearly Valentine's Day – one of my favorite holidays. I enjoy it so much because it's a time when I can express my creative skills. Some of you may make cards with your kids or put together floral arrangements for your spouses. But I want to hear about the Valentine's Day treats you're baking or cooking up for your sweets. ("Sweet" meaning all of the sweet people in your life – not just a significant other.)

In the comment field below, share your creative ideas for Valentine's Day goodies. But the catch is that you need to put a healthy spin on it. (Ex: I'm going to make chocolate covered strawberries versus plain ole' chocolate.) Submit your comments by Saturday, February 14th. Gather will draw three respondents to receive 300 Gather Points ™ each. Of those respondents, Gather will select the writer of their favorite response to receive a $25 Target gift card that can be used for buying future Valentine's Day gifts!

Every Valentine's Day, I make a heart shaped cake for dessert. Instead of using oil and butter, I add applesauce! Not only does it make the cake super moist, it adds a healthy spin to it!

No sweets here, crossed them off my list this year. Instead we will grill ribeye steaks, have baked potatoes, a steamed veggie and salads. A nice candlelit dinner. We are now using those Wishbone spray dressings, they are really good and each "spray" has just 10 calories!

I make a pure-fruit tart. I put some orange and lemon zest in the pate brisee dough and put it into a heart-shaped false-bottom French tart pan. Next, I chop 1 lb. Granny Smith apples. 1/2 lb. golden delicious apples and 1/4 lb. walnuts. I add 1 lb. raisins and cook the mixture slowly in a heavy-bottomed pot so the apples release their juices and the raisins plump up. I add sinnamon and freshly gratd nutmeg and the juice and zest of 1 orange. Fill the tart pan and bake until the crust is golden. The tart is sweet withut added sugar. I've served this tart in a regular round tart pan for guests who never guess that it is completely free of sugar or artificial sweetners. It is completely diabetes-friendly!

one idea right away, 2 years ago we had a chocolate fondue, we cut up all kinds of fruit (apples, strawberries, cherries, bananas, pineapples, kiwis ) and dip them into milk chocolate, it is so good and also healthy!!!! my favorites are the chocolate - dipped bananas

Other special Valentine treats that we make that are fun, sweet and healthy are white chocolate covered pretzels and white chocolate covered bananas. We add some red food coloring to make the white chocolate pink. The kids enjoy making these and wrapping them in pink plastic wrap to give to their friends.

Of course Velentine's Day is about sweet treats, but as a mom, I tend to lean towards the healthier options. These two snacks are a little sweet and healthy at the same time. it's a win/win snack choice!

This Valentines day, my family and I are not going to give each other a small gift, or candy like we usually do in our family. Instead we are going to make a hot meal for the 4 homeless guys that hang out around the shopping center. Hot food and hot drink to keep them warm. Something to let know someone is thinking of them.

Whaaaaat? NO sweets for Valentine's Day? Netty, that's sooo boring...LOL! Well, I am going to make a huge, 2 layer chocolate Coca Cola cake w/mini marshmallows and scruptious pink frosting.....also, I posted earlier a VERY healthy dessert for Valentine's Day, which I will also make....for Frozen Raspberry Shortcake Squares." They are delicious and low in calories.....very pretty as well, as they're pink!!!!! Along with those absolutely scrumptious, mouth watering Valentine's treats, I will prepare delicious1 1/2" thick steaks, along with homemade Cool Whip biscuits (they melt in your mouth!!), scalloped corn, and perhaps strawberry Jell-O with bananas and Cool Whip (gotta get the potassium in there, folks!!).......for drinks, something pink or red (not wine, as nobody here drinks!)!!!!!! Yes, a very, very scrumptious Valentine's Day meal, carefully/specially created by me!

Princess Spanky Pants ~ The Real, Original, Heather T Feb 3, 2009, 4:19pm EST
One of the snacks I like to make for the kids is sugar free Jello, but with apple juice instead of just water. It helps add some nutriants to the Jello, and I think it gives it a better flavor. I have a heart shaped silicone cake "pan". This year, I plan to add fresh strawberries to some strawberry Sugar Free Jello made with apple juice. We also eat watermelon quite a bit when we can, so I plan to splurge to add this to our meal for the evening.

It'll look fun and festive, and be quite a bit more healthy than standard Valentine's Day treats!

Valentine's day Kabobs-
Fruit Kabobs with Yogurt Dip. You can find red or pink plastic skewers and then load them up with strawberries, cherries, watermelon and red seedless grapes. You can use a tiny heart shaped cookie cutter for the berries and watermelon to get the festive look. Low-fat vanilla yogurt works well as a dip and strawberry yogurt would be perfect with your theme.

I guess mine is different than Heather's. :)

Jello Jigglers using sugar-free gelatin. We use bite size cookie cutters shaped like hearts and flowers. I have used pineapple juice, apple juice and even grape juice as a water substitute. I know that water is healthy, but the juice gives it an added taste that the kids love.

My husband is usually the creative cook in our family (see my photo album called Food Fun!). However, I was thinking about having a Valentine's day Breakfast since it falls on Saturday this year and making a healthy omelet with eggs, cheese, spinach (and whatever other veggies I have at the time that look good) and then use my heart shaped cookie cutters to have heart-shaped eggs!

We make things like fruit salads alot to go with dinners instead of making a traditional dessert.
I am thinking of making one, and try to use fruits that I can dye red before hand. I was thinking pineapple, pear, mago that I can soak in some red food coloring ahead of time. Strawberries, and sliced star fruit as well. Then when I mix in the yogurt, it will all turn a nice pink without having to use flavored stuff.

Apple pie- hold the sugar. We make apple pies with some spenda in it, but no sugar. FIL is diabetic so this has become a mainstay dessert around here. I have heart cookie cutters, so might design the top crust some.

For Valentine's Day breakfast, I will be making heart shaped pancakes and heart shaped eggs. I also add applesauce into my pancake batter, yummy. We will be topping our pancakes with fresh fruit.

We will also be having milk with a little red food coloring added. The kids always think it's something special when they have colored milk to drink!

My favorite Valentine Day "goodie" for my DH is to make him a sweetheart breakfast. He usually makes his own breakfast because he likes it his way, but he can't make French toast. So each Valentine's Day I make sure he gets this special breakfast, French Toast, fresh brewed coffee and warm syrup. It's the little things that keep him happy.

Here is a recipe I want to try this year, sounds yummy.
Whip together 2 small containers of strawberry yogurt (I guess you could substitute vanilla or any other flavor yogurt) and 1 small tub of cool whip.
In individual dessert dishes put 2 vanilla wafers in the bottom of each. Alternate layers of sliced strawberries and yogurt/cool whip mixture. Top with red colored sugar crystals. Refrigerate until ready to use.

Muffins such as banana walnut, berry , or peanutbutter with a yogurt frosting. My kids love them and don't realize how healthy these sweets snacks are for them. For valentine I use strawberry, rasphberry or cherry muffin (yes real fruit). Frosting is simple and made with real fruit as well and vanilla yogurt.

On Valentine's Day, I like to treat my husband to something nice. This year since we are trying to get healthy, I am going to make a healthy fruit pizza drizzled in dark chocolate. The crust will be a healthy oatmeal raisin cookie dough with some flax seed in it. Then, will be a thin layer made with a fat free cream cheese and a small amount of sugar. The top will be decorated with as many of his favorite fresh fruits as possible...and then drizzled in just a bit of dark chocolate....all shaped like a heart....He is going to love it!

I like to make a big heart shaped pizza! The dough is easy to form into a heart shape. You can put on all kinds of healthy toppings (spinach, artichoke hearts, tomatoes, and fresh mozzeralla are my favorite). Make it even healthier by making a whole wheat or whole grain crust.

A great cake that is perfect for Valentines day is also healthier than the traditional cake with many layers.

This cake is really easy to make. Take any kind cake mix and make it as directed. Pour it into one round and one square cake pan. Bake as directed. When cool. Take the square cake out of the pan and put it on a form that is made from a large piece of cardboard covered with tin foil. Now cut the round cake in half and place it around the square cake to from a heart shape. You will need to cut a small slice from the bottom of both the round cakes to make it a perfect heart.

Now all you have to do is frost it and decorate it anyway you like. Looks great with white frosting and pink trim. Deoorate it with "I love You"

I discovered long ago that it’s not just the things that we say, but the things we do in the name of love that define its meaning. And luckily, Valentine’s Day offers me the perfect opportunity to do so—it’s the one day a year that reminds me to do all of the thoughtful and romantic things we should do every day.

To that end, I started a tradition of making Sweets for my Sweets!

( You see when I began doing this I could not afford cards nor fancy chocolates, nor flowers for my kids to give to there daddy and grand parents and friends; so I had to get a little creative)

So I started making Valentine Cookie Grahams for every one of our 'sweets'.

Today it has become sort of a family tradition that I now carry on with my grandchildren.

My healthy spin is that Graham Crackers are made from graham flour, a type of coarse wheat flour which is very high in fiber, and my healthier frosting choice is to use either organic vanillia yogurt thickened with cream cheese or if I am short on time I purchase a store bought icing mix labled vegan.

Here is my recipe for Valentine Cookie Grahams

You need: One Graham cracker per Valentine , pink frosting (put red food coloring into frosting) Alpha Bits cereal & small candy hearts

Directions: 1- Frost Graham cracker with pink frosting. 2- "Write" your message (I Love You Mommie/Daddie etc and your name) using the Alpha Bits and placie them on the middle of the frosted cracker. 3- Decorate the boarder with candy hearts. Let dry about 1 hour

Then we package up our Valentine Grahams for our 'Sweets' in those adorable little sacks you can get at the dollar store. Viola, inexpensive & healthy gifts to give out to our 'sweets'. Overtime I even realized that in doing this I also created loving memories for me and the kids and now my grandkids.

Making Valentine Grahams is how I celebrate my 'sweets' with a sweet

Chocolate is the food of love. Some say eating it gives you the same feeling as being in love. Chocolate brownies...made healthy by making them FAT-FREE using egg whites, cream of tartar and plain, fat-free yougurt in addition to the usual ingredients (no butter or whole eggs). Add some walnuts and, while you've added fat, you are getting Omega-3 fats...there is a reason they call them ESSENTIAL fats. Enjoy...guilt-free and experience LOVE.

I make banana muffins in "Hershey Kisses" shaped muffins tins. These banana muffins are made with applesauce instead of shortening and I use a 1/4 cup of wheat germ instead of all flour. The end results are special because of the shape, but are also healthy and delicious at the same time.

We make lady bugs on a stick for school! Its fast, healthy AND the kids LOVE the shapes!!

For each one, push half of a red grape onto a trimmed wooden skewer for the head.

Next, push on a hulled strawberry body and score the back to create wings.

For spots, use a toothpick to gently press mini chocolate chips, tips down, into the fruit. Arrange the skewers on a honeydew melon half.

Another one of our favorites are Graham Cracker Sandwiches!

You take a graham cracker and break it in half. Put cool whip on one half and then put the other half on top, dip each side into different colored sprinkles and then put them in the freezer!

They taste even better than ice cream sandwiches and without all those calories!

You and I think alike Stefanie!!! I'm addicted to dipping any and every fruit in chocolate for my loved ones! I will also use caramel but it tends to not clean up as easily (too sticky). My "sweets" love that their sweet tooth is satisfied, and I love that they are eating fruit! Chocolate covered strawberries are my specialty!!!

Also, to show that I love them, I make them healthy meals (not just sweets) using tofu (high in antioxidants) and opting for using egg whites instead of eggs for omelets, quiches and other recipes. I've been known to substitute apple sauce in some too! I try making small variants here and there so they don't really notice that their meals are getting better for them. They still taste great!

I am not sure this is the healthiest Valentines day meal but I guess there is far worst ;)
My mother use to make us heart shaped pancakes for Breakfast on Valentines day.
She would funnel the batter into a squeeze bottle with a hole in the cap. Then on the griddle, shape the hearts one lobe at a time. Really they just looked like a V shape, which spreads out into a heart on the griddle. She always topped them with fresh berries and maple syrup (for my sister as I do not like syrup)

For a perfectly shaped heart, make regular round pancakes and cut them out with a heart-shaped cookie cutter. This might be a little easier and faster too. ;)

I always serve a snack to the class of 2-3 year olds that I teach (my son is also in this class) and I am planning to "theme" the snack next week.

I want to find the red or pink bread to make PB&J sandwiches, which are always a hit with this class, and use a cookie cutter to cut them into heart shapes. I will add some cut up strawberries on the side. For their "dessert" I bought heart-shaped ice cube trays to make sugar free jello, and they are the perfect size for little fingers!

Valentine's Day fell right in the middle of the LOVE lessons that we are doing, so I think this will fit perfectly with the other activities we have planned.

We do french toast or whole wheat pancakes for breakfast on Valentine's Day. I cut them into heart shapes, and always serve them with fresh fruit.

For his afternoon snack, I will make my son one of his very favorite snacks. He loves fresh sliced strawberries with granola and yogurt or cool whip. The strawberries turn the whole thing pinkish, so it will be the perfect valentine snack.

I usually tint my grandson's milk pink for the day, for dessert we have cherry sugar free jello with light cool whip and strawberries on the side to dip. We also make heart shaped cookies and decorate them with either pink icing or cinnamon hearts or both...these get sent to school for his class, the principal and the school secretary. We also make sure that the older couple that lives next door to my grandson and I always get treats or homemade goodies;soup, desserts, etc when we make them. There is just my grandson and I, so I get to relive the times with my kids and the kiddied things I love to do.

We are having fruit smoothies. We use the blender and put in frozen banana chunks, frozen strawberries, frozen mango and frozen papya. Then we add a bit of OJ concentrate and enough water to make it blend but keep it thick. We then top with whipped cream and a cherry. It is smooth, sweet and red and so yummy.

I got the cutest Valentine dog treats for Hannah, my beagle. Michael is getting a new digital camo bathrobe and towel set and a couple of 100 calorie dark chocolate treats. We'll probably have deer meat burgers and baked potatoes for dinner since I have to pick up the meat from the processor on Saturday. HAPPY VALENTINE'S DAY !!

WEllll we are ( my friend and I) making healthy brownies that we will cut out with valentine cookie cutters. Healthy you say? Yes, we both have some serious food allergies and willl be using gluten, rice, corn and oat free flour with all natural ingredients to make our brownies for our Valentines.....17 little girl scouts at camp this weekend! We will also be making gluten, corn, rice and oat free pancakes with strawberries and whipped cream or syrup made from apple cider and tapioca starch as a thickener. You cook the cider down and then thicken it with the starch. Both yummy alternatives to corn syrup type pancake syrup. Of course the pancakes will be in the shape of hearts also. Yummy.

I'm going to make 2 hearts on a pretty plate shaped out of fresh strawberries, blackberries, raspberries and blueberries. In the center will be a heart-healthy dip made with no-fat, black cherry yogurt.

I always make my no bake cookies a bit healthier, and no one notices the difference.

I reduce the sugar, use reduced fat butter and use natural peanut butter.

I am making "angel hearts" for my angels. melt dark chocolate and put a thin layer in the bottom of my "soft flex form" heart shaped muffin pans. put in refridge. to chill, pop each heart shaped chocolate thins and store in refridge. Make a box of angel food and make heart shape angel muffins. cool and pop out of pan. Chop exotic fruits: mangos, kiwi, strawberries into small pieces. To assemble: on a pink heart plate, place the angel heart muffin in the center, top with a dab of canister whip cream, add small amount of fruit and top with thin chocolate heart. For me, the small dab of whip cream is fine... I'm sure my angels will want to cover their plates with it... :)

I usually don't cook for Valentine's Day because we go out for a nice romantic dinner, not on Valentine's Day though because it's always too crowded in the restaurants! We pick a day near Valentine's Day to dine at our favorite Japanese steak house where they cook in front of you, and they have healthy options such as salmon, which tastes great and is also good for you. After we eat there, we will go to TCBY and have healthy Beriyo yogurt smoothies for dessert. As advertised, they are a "delicious blend of TCBY real dairy frozen yogurt and real fruit and fruit juices, are loaded with calcium, protein and Vitamin D and are available in 12 ripe and juicy flavors! Even the names will make your mouth water!" You can also add a scoop of vitamins or other supplements for free!

I love to make heart shaped pizza. I top it with all kinds of veggies (my favorite) so it's somewhat healthy. The kids love this tradition. It's fun to get the family to gather around and talk about what they love. It's the perfect laid-back meal for my laid-back family.

I love to bake, and have always made cookies for my family for holidays. My dad became ill a few years ago, and was put on a very restricted diet. He still loves sweets and treats, so I decided to come up woth a healthy cookie for him. I took a recipe for oatmeal chocolate chip cookies and tweeked it. I use applesauce or plum puree instead of butter, and splenda in place of sugar. I sometimes use carob chips, other times raisins, dried cranberries, or dried cherries. Walnuts, cinnamon, and nutmeg give the cookie a great flavor...he loves them and doesn't even think of them as a "healthy" cookie!

I usually make the fruit cake. Instead of putting it to the regular cake form I use heart shape form and when it is bake on the top I put any red fruit, strawberries or rasberries. Then on the top I pour some gelatine and usually add some whiped cream and chocolate. Doesn't that sound great? :)

I do theme cakes....[use to do them professionally, many, many moons ago] and every VD I do a shaped Angel Food Heart cake with slices of strwberries cut in heart shapes scattered around the edges of the cake then sprinkle it with light white powdered sugar [very light] because my husband's diabetic and angel food cake is one thing that is good for them and they can eat....so I improvised and instead of making a chocolate cake or etc...I use natural flavoring [strawberries] and light powdered sugar and angel food....quick easy and cute.....and healthy.

I don't ever go for candy. God's candy is fruit, and that's what we do. It's not original but it is sweet! Chocolate covered strawberries are the best. Do use dark chocolate for the best flavor and the antioxidents.
Did you know that strawberries are not fruit but from the rose family? So how appropriate is that?

being that i have hyperactive children, we always limit the artificial sugar and opt for natural sweeteners as in fruit. This recipe I always save for v-day desert because I make little cuts to the surrounding areas of the pear halves to make them heart shaped! even hubby loves it because it is so delicious (he dislikes my healthy stuff if he knows its good for him)

Sauteed Pear Sundaes: (good for two servings, double or tripple recipe for a family, per 1 pear half per person)

1 teaspoon butter
1 pear, halved
2 teaspoons brown sugar
1/8 teaspoon ground cinnamon
Pinch of ground ginger
2 scoops nonfat frozen yogurt

Melt butter in a small nonstick pan. Add pear halves and cook, stirring occasionally, until golden and tender. Sprinkle with sugar, cinnamon and ginger; stir until the sugar melts. top with a scoop of non-fat frozen yogurt (optional but good).

We can take a empty large cardboard heart box and fill little heart pattern cups with blueberries, strawberry, banannas and grapes.

Take the blueberries, then a layer of strawberries and then a layer of grapes use them as a border around the heart, then take the 2 banannas and put then in the shape of a heart towards then center. Then to fill in that part take cashews/peanuts/walnuts (shelled) in the middle of the two banannas.
Cover with the top of the Cardboard heart and give a very healthy heart to someone.

For the kids, Shirley Temples are a must! I want to try making a flower fruit basket this year too, cut the fruit into flower shapes and stick them on skewers, then put them in a vase. Looks pretty and tastes soooo good. My kids are big fruit eaters so they'll love this!

Panna Cotta
2 cups vanilla soymilk
1 1/2 teaspoons unflavored gelatin
2 tablespoons sugar
1 1/2 teaspoons vanilla
Dash salt
Raspberry Sauce or fresh raspberries, if desired
2 tablespoons sugar
1 teaspoon cornstarch
1/4 cup water
1 1/2 cups fresh or frozen unsweetened raspberries

Print these coupons...

About Concordance™

1. Pour soymilk into 1 1/2-quart saucepan. Sprinkle gelatin evenly over soymilk; let stand 5 minutes.
2. Add 2 tablespoons sugar, the vanilla and salt. Heat over medium-high heat 2 to 3 minutes, stirring constantly, until gelatin is dissolved and mixture just begins to simmer (do not boil). Remove from heat.
3. Pour mixture into four 1/2-cup ramekins or 6-ounce custard cups. Cover with plastic wrap; refrigerate about 4 hours or until set.
4. Meanwhile, make Raspberry Sauce: In 1-quart saucepan, stir together 2 tablespoons sugar, the cornstarch and water. Stir in 1/2 cup of the raspberries. Heat to boiling, stirring frequently. Reduce heat to low. Cook 3 to 5 minutes, stirring frequently, until slightly thickened. Cool 10 minutes. Stir in remaining 1 cup raspberries. Cover; refrigerate at least 1 hour until chilled.
5. When ready to serve, run thin knife around edge of each panna cotta. Dip bottom of each ramekin into bowl of very hot water 5 seconds. Immediately place serving plate upside down over each ramekin; turn plate and ramekin over and remove ramekin. Panna cotta will flatten slightly. Top with Raspberry Sauce.
High Altitude (3500-6500 ft): In step 2, heat over medium-high heat 4 to 5 minutes (do not boil).

I usually make a chocolate fondue and cut up fruit to dunk in. My son and hubby both love it.

For dinner, I usually make a pasta dish for my husband. That is his favorite. I make a pesto sauce without the nuts and with a tiny bit of the cheese and I don't add extra salt. My son can't have that so I make a marinara for him. I try to use as little oil as possible.

In the a.m. I make heart-shaped french toast, altho' the only way to make that healthier is to use Egg Beaters or egg whites instead of the whole eggs in the batter.

In the past, I've also used Egg Beaters to make thin crepes and I have filled them with sugar-free fruit spread and a bit of fresh fruit. I drizzled them with dark chocolate.

Nora, you think all the people who have no sweet tooth but have a serious salt toth think Valentine's Day is boring without sweets?? Hardly! And all the people who for heallth reasons must aboid sweets? I asssure you they are not bored.

Oysters are an aphrodisiac. I loved making oyster stew for my late DH, and topping it with another aphrodisiac, parsley. I served it heart-shaped bowls. He loved it.

I am going to bake a heart shaped angel food cake. I am then going to take some lowfat cool whip and add red food coloring to it so it turns pink. I will frost the cake with it. I am then going to slice strawberries into thin slices and cover the top of the cake with them. Very healthy and lowfat!!
