My mother told me how to make cornflakes chicken, even before I started high school, and although I'm a vegetarian, it has found it's way to our dinner table quite often. is something I make often. Since chicken is still rather inexpensive compared to other meats, I really try to make a variety such as chicken curries, chicken stews, bbq chicken etc, but the cornflakes chicken is one of my son's favorites.
I beat up an egg, and added some spices, salt and pepper. Tonight I added a bit of barbecue sauce, but normally I do with out. I then turned the chicken legs in the mixture, and then I rolled it in crushed cornflakes.

I covered them with a foil paper and put them in the oven at 400 degrees, and after 20 minutes I took the foil off, so that the cornflakes remain crusty and I turned the oven down to 350 degrees.

Since we are using the oven tonight to keep warm, I put in some baked potatoes and it turned out to be quite an easy dinner.

The chicken usually takes 45 min to an hour of cooking in the oven, and the final result is nice brown and crispy chicken legs.

Kim, I'm sorry to hear your husband doesn't like it. My husband actually had dinner with us tonight, and he loved it.
I like to make chicken wild-rice soup the most with chicken. Then I like chicken burritos.
We use chicken alot. My husband will BBQ it on the grill in summer time, chicken quesadilla's, chicken fried rice, chicken baked in the oven, fried chicken. We will probably eat it for about as many ways as there is to cook it.

We eat a lot of chicken at our house. We had chicken tonight. We had chicken stir fry with peppers, carrots, snap peas, broccoli, and maybe something else. I don't remember. My husband cooked. :)
We eat chicken cooked several different ways. We eat it with rice a lot, either cashew chicken, kung pao chicken, chicken fried rice, or a mushroom, chicken and rice casserole. We also marinate it in italian dressing, and then cook it with potatoes and mushrooms. Elliott LOVES it that way. Then there's also things like tacos, quesadillas, chili, etc. And sometimes we just grill it or bake it, and every once in a while I make chicken nuggets or chicken strips.
I have also made this with Chicken Strips and nuggets ;-)
I have a friend that said she uses crushed up doritos, and they really like it.
