Tonight we are having a favorite in our house, Scandinavian Hasselback Potatoes and our very own creation spicy meatballs. My husband likes spices, and for some reason the boys just love the spicy meat balls.
For Sky's Christening in Denmark we tried many different version of our spicy meatballs, and it turned out that a combination of pork and beef was the preference at home. The stores I go to rarely carry ground pork though, so beef meatballs would do.
I used 2 lbs of ground beef
black pepper
cayenne pepper
hot sauce (the milder kind)
bbq spice
garlic spice
paprika
salt
All purpose seasoning salt
oregano
Goya Adobo all purpose seasoning
Crushed garlic and crushed chili pepper (as small pieces as possible)
(You can use whichever spices and herbs you see fit, in our house we like lots of spices as you can see)
I mixed it all together and put it on the pan with a little olive oil. I usually by the 80 percent lean ground beef, as I take off the the fat as it starts simmering.
Cook the meatballs on medium heat until they start getting color, then turn them around and turn down the heat a bit.
Hasselback Potatoes.
Peel the potatoes, and cut lines half way through the potato. 
Mix the spices and herbs you would like to marinate the potatoes with and olive oil. I used fresh basil, rosemary and garlic, and then I added paprika, salt, pepper and dried oregano.

Spray a pan with cooking spray and put the marinated potatoes in the oven at 400F.


When they start turning brown turn the potatoes upside down and remove once the other bottom turns brown and crispy

As a perfect side I made corn muffins.

Final result:

To make dinner extra exciting for the boys I put the meatballs on sticks with delicious grape tomotoes, cucumber and orange.

We had some leftover sweet potatoes from yesterday and we added some snap peas for a superb dinner.

Now, since I'm a vegetarian I switched out the meatballs with falaffel, which I made another day and put it in the freezer.

I just had dental work, so we will be having SOS - shit on shingles - from our military days:).
Basically mashed potatoes, topped with ground beef in a brown sauce. I'm thinking of serving it with my home grown lettuce.
