Believe it or not putting some jalapeno in your tuna salad is not that strange and can liven up an otherwise boring sandwich. The sandwich has the added health benefits of being low cal with a serving of Omega 3 fatty acid. You can also substitute mayonaise with no-fat sour cream for an even healthier meal. This works well for those who need to watch thier cholesterol.
Although there is nothing wrong with a good raw whole jalapeno now and again jalapeno's are not just for making food spicy hot. The trick is to use them to wake up your taste buds but not be the overwhelming ingredient We will leave that for the red faced, watery eyed jalapeno eating contestants down at the local pub. We just want a good lunch.
The recipe is your basic Tuna salad with a mixture of chopped jalapeno's and onions to arrest the fishy flavor and bring out the tuna while adding just enough spice to keep it from putting you to sleep. This recipe should be enough for four sandwiches Naturally this being a sandwich you can use your favorite bread but my recomendation is toasted whole wheat or a healthy multi grain bread. The ingredient measures work well for me but there is a lot of leeway for taste in this recipe. Except for the no fat sour cream which could make the mix a little too runny for bread if overused.
Ingredients.
(2) 6oz. cans of chunky white tuna ( or your preference )
(2) medium raw jalapeno's ( garden fresh if possible )
(1/2) medium common onion.
( 4 ) teaspoons of mayonaisse or fresh No-Fat sour cream
( 8 ) Slices of whole wheat or multi grain bread toasted.
Start by draining the tuna and placing in a glass bowl.
Chop the onion and jalepeno's sepeartely so you can make the jalepenos fine and the onions medium. mix together and fold and chop to evenly mix. There should be a mix of 1/3 jalpeno. Begin chopping the tuna in the bowl and add the 4 tablespoons of the onion and jalapeno mix. Add the mayonaise or no-fat sour cream and fold and mix to desired consistency.
Toast the bread and make four sandwiches with the tuna salad.
Place on a plate and slice on the diagonal spread at one end and instead of chips place lettuce and tomato wirh honey mustard for dressing in between the halfs. Make it look good.
Note: For the totally health concious ! Althought not crtitcal and you probably won't notice the difference, it has been found recently that letting the chopped spices sit for 15 minutes before use, has added health benefits. But this is lunch so 15 minute might be too long to not make it painful to wait for.

I just saved this one to my recipe file!!
up a notch! I make stir fry with tomato, jalapeno, peppers
(red, yellow, green, orange) zuchini squash, white onion. A
red onion could be used. I stir fry in my electric fry pan works
for me! A little extra virgin olive oil a pat of real butter. When
the oil and butter heat up get cooking those veggys which
have been sliced diced whatever. Serve over brown rice.
I use mustard mixed into the white albacore tuna, some
Mrs Dash, chopped onion. Warm hamburger rolls up in
my electric fry pan nice 'n toasty. Spread the stuff! Yum!
Regular yellow mustard or Guldens Spicy mustard.
