I love to stretch a buck, especially when it comes to our grocery budget. Lately, I've been trying to focus on making healthy and flavorful meals for our family and spending as little money as possible.
This week, I was able to make Thursday's dinner, and Friday's lunch for only $8.21 for both meals. That breaks down to $1.03 per serving (each meal made at least 4 servings).
Here are my recipes and the cost of each meal:
Thursday dinner: Oven Roasted Chicken, stuffing, and corn on the cob
Ingredients:
Whole Chicken (I got this on sale for 77cents a pound on a price match from another grocery store about a month ago. It's been sitting in my freezer waiting to be used. It was a 4.97 pound chicken, so that cost me $3.83)
Box of Stove Top stuffing~98 cents
Corn on the Cob (3 ears)~60 cents (they were on sale 5/$1 this week)
You simply rub your chicken with melted butter (had on hand) and season to taste. Cook at 350 for about 2 hours until juices run clear. Stove top, prepare as per package directions. And the corn on the cob I break each ear in half and boil.
Friday's Lunch: Chicken Tacos
I simply de-boned the chicken after dinner and used that meat to make tacos.
Ingredients:
White Onion~27cents
1 red bell pepper finely chopped~69cents
2 green bell peppers finely chopped~64cents
1 package of 10 corn tortillas~$1.20
left over chicken.
Put a few tablespoons of oil in a skillet and add chopped onion. Cook until onions are translucent. Then add the red and green bell peppers. Last, add the left over chicken. You are simply re-heating the chicken, not cooking it, so don't over do it. Add seasonings if needed, but usually you don't need to since the left over chicken was seasoned before.
While the chicken is reheating, you can warm your tortillas at the same time.
I also used some monterey jack cheese that I had on hand to top the tacos.
FYI, we are a family of 4, but our youngest is only 7 weeks old. However, I do make all of my recipes to feed 4 or more, since my hubby takes the leftovers to work for lunch. So, that's why I say that it feeds 4, because it feeds the 3 of us plus one or more servings for leftovers for hubby. So, in essence, these recipes will feed 3 adults and one child.

I love the English language - boned and deboned both mean taking the bones out.
Good for you - I do the same thing, as the prices of groceries keeps going up and up. Also, the size of things keeps shrinking, like packages of pretty much anything, so my cooking always leaves more for making something different for another meal. You're doing great!

Another tip: take the bones put them in a large pot, cover with water and simmer for several hours, strain out the bones -- voila! You have chicken stock for making gravy, stuffing, soup or seasoning another meal. Freezes great too.
