Chili With Rice
! Pound of ground Beef
1/2 medium onion chopped into small pieces
1 green pepper chopped in to small pieces
1 jalepeno Pepper chopped in to small pieces
1 clove of garling finely chopped
1 teaspoon of olive oil
1 can of chili beans
2 cans of tomato Sauce
3 cans of tomato paste and 3 cans of water
! tablespoon Italian Seasoning
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon cumun
1 teaspoon red pepper flakes
2 tablespoons chili powder
Optional: Corn - I used some left over corn that I had and added it to the recipe above. It was a nice addition.
2 cups rice cooked according to package directions or in a rice cooker
Some shredded cheese to top the chili with, I used Mexican Shredded, about a handful per serving.
I cook everything in my sauce pan, but I have a good thick bottomed sauce pan. If you think your pan will be ruined sauteing the veggies and browning then meat then start in a frying pan to saute and brown, then pour the ingredients in to a large sauce pan.
Saute the onion, garlic, and peppers in the olive oil just saute them for about a minute or so just until they begin to sweat a bit, then add the ground beef to the pan and brown it. If using a frying pan pour the ground beef mix in to a large sauce pan. Add the cans of tomato paste, tomato sauce, water, and beans. Stir all the ingredients together. Add all your seasonings and stir. If adding corn put it in the pot at this time. Allow the chilli to simmer for at least 30 minutes. Check it every so often to make sure it is not burning.
After it simmers for a nice amount of time. Then dish some rice on a plate, top it with the chili and sprinkle with cheese.
