Another recipe from my research for Diabetes Library at http://diabetes.boomja.com. I adapted it from the original a little bit.
There are a lot of interesting links in the ibrary, but when we get all these uploaded, it is going to be HUGE! And these recipes are a lot more fun than the Complications of Diabetes I've mostly been researching, I promise you.
Berry Parfait
1 oz sugar free strawberry preserves
6 oz sugarfree vanilla yogurt
1 cup low fat granola without raisins
1/2 cup fresh blueberries
1/2 cup fresh sliced strawberries
Combine preserves and yogurt in bowl and blend well.
Layer each of 2 8-ounce parfait glasses as follows: ¼ cup granola, ¼ cup berries, 3 tablespoons yogurt mixture, ¼ cup berries.
Garnish with a dollop of remaining yogurt mixture and a whole strawberry and blueberry if you like.
